Il y a 2 heures · The main purpose of oil smearing is to prevent permeability of air, minimize desiccation through evaporation and seepage, and to also provide additional flavor (Muzaddadi and Basu 2012). The sun-dried fish is soaked again in water for 5–10 min to obtain the best quality product (Kakati and Goswami 2013 ) which is then partially dried overnight at room temperature.
